Chicken curry with rice
When I was living in Spain, with my not-so-little sister I decided to try and do some chicken curry with rice. I didn’t do the recipe that I bring today, but I actually tried doing my own thing. Cook rice with curry, the chicken separately and then put everything together. I like the flavor, but it was too thick.
Finally, a few months ago I looked for a simple curry recipe and tried it. I found it HERE and I like how easy and quick it is.
Let me know in the comments if you try it and how you like it!
We will need the following ingredients for the chicken curry with rice:
Start by cooking the rice in a pot. Put a little bit of olive oil in the bottom of a pot, warm it and put 1 cup of rice. Let it cook for about 30 seconds and pour 2.5 cups of water. Stir every once in a while so it doesn’t stick to the bottom. Cook until there’s just a little bit of water left, cover it and let it sit on a side.
Warm up a pan and melt the butter. Mix with the flour and stir in curry powder. Melt this slowly in milk, stirring until dissolved to avoid lumps. You can use a blender if lumps happen. Taste and add salt and pepper to taste.
Cut the chicken into pieces and cook with the curry sauce.
You can either mix everything together or have it separate. Enjoy!
